Instructions:

Cut a narrow 1" X shape all the way thru the beef roast. Fill the X-cuts with the sausage. 

Heat oil in a Dutch oven until hot. Cook beef over medium heat until brown on all sides (15 minutes). Drain fat. Add remaining ingredients, heat to boiling. Reduce heat, cover and simmer until beef is tender (2-2 1/2 hours) 

Remove bay leaves, skim fat from sauce and serve roast and sauce.

Ingredients:                                

3 Pounds Rump Roast, Trimmed

1/2 Pound Spicy Sausage

2 Tablespoons Olive Oil

1 Medium Onion -- chopped

3 Cloves Garlic -- chopped

1 Large Green Pepper -- chopped

1 Teaspoon Oregano

1 Teaspoon Salt

1/4 Teaspoon Pepper

2 Bay Leaves

8 Ounces Tomato Sauce
