Instructions:                               

Heat half of oil in wok or large frying pan. Stir-fry beef in batches, till brown all over.

Heat remaing oil in same wok. Stir-fry onion till soft and brown. Add ginger, curry paste and ginger. Stir-fry until fragrant.

Stir in coconut milk and bring to boil. Reduce heat, return beef to wok with capsicums and beans. Stir-fry until veggies are tender.

 Beef Coconut Curry

Ingredients:                                

2tblsp peanut oil

500g beef rump steak, sliced thinly

1 brown onion, sliced thinly

15g fine grated ginger

1 crushed garlic clove

80ml curry paste

400ml coconut milk

1 yellow capsicum, sliced thin

150g green beans, halved
