Instructions: Combine 1tblsp of the curry paste and 1tblsp of oil in a small bowl. Rub lamb with this mixture. Cook lamb on heated oiled grill pan or pan-fry until browned on both sides and cooked as needed. Transfer to plate and cover letting it cool for 5mins. Heat remaining oil in med saucepan adding onion, carrot and celery to cook, whilst stirring till veggies are soft. Add garlic and remaining curry paste and cook till fragrant. Add stock and lentils and stir until hot. Remove from heat, add spinach and cilantro, and toss till well mixed. Slice Lamb and serve with lentil salad. |
