Instructions: Preheat oven to moderate hot. Brush beef with 1tblsp oil; sprinkle black pepper. Heat 1tblsp oil in large shallow, flameproof baking dish; cook beef, uncovered over high heat until brown all over. Place dish in moderate hot oven; roast, uncovered for 45mins or until beef is cooked through or as desired. Heat remaining oil in another baking dish; cook potatoes over high heat until browned, lightly. Add pumpkin and kumara, place dish in oven. Roast, uncovered in moderate hot for 35mins or until veggies are browned. Reduce oven to slow. Place beef on veggies and return to oven to keep warm. Drain juice from beef baking dish into a med saucepan, add appletiser and bring to boil. Blend cornflour with water and add to mixture together with stock. Cook, stirring, until sauce boils and thickens slightly. Stir in chives then pour into sauce cup and serve with roast. |
