Instructions:

Prepare caramelized scallion…         …Melt butter in frying pan. Add scallion and cook, stirring till soft. Add grape juice and sugar and continue stirring occasionally till scallion caramelizes or for 20mins.

Prepare chili tomato jam…              …Heat oil in med saucepan and cook garlic, stirring till gently browned. Add tomato, sauces and sugar and bring to boil. Reduce heat and simmer, uncovered for 45mins or till mixture thickens. Stand for 10mins and stir in cilantro.

Cook beef on heated and oiled grill plate till brown on both sides and cooked as desired.

Oil both sides of bread with a brush and toast on hot grill.

Sandwich rocket leaves, beef, chili tomato and caramelized scallion between toast. 

 Steak Sandwich

Ingredients:                                

4 beef scotch fillet steaks

8 thick slices of bread of choice

2tblsp olive oil

60g rocket leaves


Chili Tomato Jam:

1tblsp olive oil


2 crushed garlic cloves

4 tomatoes, coarsely chopped

1tblsp Worcester sauce

½ cup sweet chili sauce

80ml brown sugar

1tblsp fresh cilantro coarsely chopped

Caramelized Scallion:

30g butter

1 scallion sliced thin

2tblsp brown sugar

2tblsp white grape juice, sparkling
