Guiso De Repollo

Ingredients:                                

1 Small Cabbage -- shredded

3 Tablespoons Olive Oil

1 Large Onion -- chopped

3 Medium Tomatoes -- chopped

1 Large Jalapeno -- chopped

Salt And Pepper -- to taste

1 Tablespoon Tomato Puree

2 Tablespoons Cilantro -- chopped

4 Medium Potatoes -- peeled & cooked

Instructions:

Drop cabbage into large suacepan of boiling salted water. Simmer 5 minutes. Drain thoroughly, set aside.

In skillet, saute onion in oil until soft. Add tomatoes & pepper. Saute 5 minutes. Add seasonings, puree allow to simmer 1 minute. Fold into cabbage, add to potatoes, which are cut into chunks. Cook until just heated through.
Variation: Add 1/2 cup dry white wine when folding into cabbage
