Instructions: Sauté in oil, beef for 5 minutes. Add onion, cumin, salt, pepper, and chilies. Stir for 2 minutes. Add garlic and water, cover, simmer for 30 minutes. Add potatoes and continue cooking until tender about 20 minutes. Mix in corn, bell pepper and lime juice. Simmer for 10 minutes. Ladle into individual soup bowls and sprinkle cilantro in each bowl. |
